on a lighter note...

How about some cookie dough...CUPCAKES! :)



Recipe from Kevin & Amanda Blog





Oh my. Yumm.

I know. You're looking at the picture saying, "April, how is the cookie dough, still dough after baking?" Well, according to Amanda...you freeze the dough balls ahead of time before baking so they hold the shape and consistency of dough. Duh!

Here are the dets:

Chocolate Chip Cookie Dough Cupcakes
with Cookie Dough Buttercream Frosting

For the cookie dough:
2 sticks softened butter
3/4 cup sugar
3/4 cup brown sugar
4 tbsp milk
1 tbsp vanilla
2 1/2 cups all purpose flour
1/4 tsp. salt
1 cup mini chocolate chips

Directions: To make the cookie dough, combine the butter and sugars in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 mins. Beat in milk and vanilla until incorporated and smooth. Beat in the flour and salt until just combined. Stir in the chocolate chips. Using a 1.5 tbsp scoop, shape the dough into balls or tubes. Freeze on a parchment lined baking sheet overnight.

For the cupcakes:
3 sticks softened butter
1 1/2 cups light brown sugar, packed
4 large eggs
2 2/3 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup milk
2 tsp. vanilla extract

Directions: To make the cupcakes, preheat the oven to 350° F. Line two cupcake pans with paper liners (24 total). In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and brown sugar. Beat together on medium-high speed until light and fluffy, about 3 minutes. Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.

Combine the flour, baking powder, baking soda, and salt in a medium bowl. Stir together to blend. Add the dry ingredients to the mixer bowl on low speed, alternating with the milk, beginning and ending with the dry ingredients, mixing each addition just until incorporated. Blend in the vanilla.

Using a 3 tbsp scoop, fill the prepared cupcake liners 2/3 full with the cupcake batter. Place a frozen cookie dough ball on the top center of each cupcake.

Bake at 350 for 16-18 mins.

For the frosting:
3 sticks softened butter
3/4 cup light brown sugar, packed
3 1/2 cups powdered sugar
1/2 tsp. salt
2 tbsp. milk
1 tsp. vanilla extract

Directions: To make the frosting, combine the butter and brown sugar in a mixing bowl and cream on medium-high speed until light and fluffy. Beat in the powdered sugar until smooth. Beat in the salt, milk, and vanilla extract until smooth and combined.

Frost the cupcakes and sprinkle with mini chocolate chips!

Makes 24 cupcakes.

We've been meal planning...

Yep. It's true.

About a month ago, while working on our budget I realized that in one month we had spent nearly ALL of one of my paychecks on eating out...eating out?!?! And I am good cook! This has to stop!

So...meal planning it is.

Because after all, I am a planner.

I need organization.

I need a shopping list.

I need to know what I am cooking before I get home.

And...let's be honest...Husby needs to know what he is having for dinner...because with our track record, I walk into the living room and say "Spaghetti for dinner..." and he will almost always reply with, "Ohhh ok...I was hoping for...enter any of our normal lame classics here..."

Sorry babe, but it's so true.

So...meal planning it is.

We have been at it since, August 23rd and we are doing GREAT! The goal was to incorporate some new recipes from our new book, the "Savvy Shopper's Cookbook", and some Clean Eating recipes from the "Clean Eating Magazine" that our BFF's let us borrow...(Oh you can check out her reviews of some of the recipes on her blog here...) and of course...there are the classics. Every family has the classics...ours are...Spaghetti, Steak and Baked Potatoes, BBQ Chicken and Homemade Mac & Cheese, Stuffed Green Peppers, and the list goes on!

OK...anywho...since we started, here's what we have been eating:
8/23/10 - Alfredo Chicken Pasta - which was delicious, even though I didn't add the carrots in called for...I don't enjoy carrots, and Hubsy wanted them in there for color...but uhh no.
8/25/10 - Biscuit Cheeseburger Casserole - it was good...however the "add the biscuits to the top and back" part...well it left the bottom 1/3 of the biscuit a little doughy and thus Husby was a little grossed out. We just peeled that part off, but I almost lost him on this meal :P
8/26/10 - Sandwiches (part of the Classics... :) heehee)
8/28/10 - Grilled Fiesta Chicken Sandwiches - These were yummy, but still a little bland...we most certainly had no "party in the mouth" feelings :P
8/29/10 - Spaghetti - For lunch, at church...a fundraiser. - Well, I bought my ticket, but ended up having Sushi with the sister while Husby went home and slept!
8/30/10 - Skillet Lasagna - Ok, this...was...delicious! Seriously It was SO yummy. And we had a TON leftover. I am freezing it, so hopefully it will make another great meal very soon!
8/31/10 - Sweet and Sour Chicken
9/1/10 - Pulled Pork Sandwiches
9/3/10 - Chicken Spaghetti

I am sure if you are paying attention, you will note some days were missing...that just means either I had a meeting where dinner was provided, or we were somewhere else where dinner was provided. So there was no need for an organized home meal.

Anywho...here's how it works.
I will sit down on the scheduled (every two weeks) Saturday or Sunday and plan the next two weeks. That goes for checking the calendar, to see what's going on, and then picking out recipes and getting the grocery list in order. Then before that first day of scheduled cooking begins, I will get the shopping done and we are all prepared and ready to go for two weeks!

Now, we aren't locked in to the cooking schedule by any means, so if we want something else that night, we can swap some of the two week meals around or hit up some of the other food i the house. And we aren't locking out any notion that there may be nights that I don't feel like cooking, or those nights when we really just want some Chick-fil-a; but we are no longer those people who eat out all the time and waste our money on food that probably is not the best for us anyhow!!

I am really excited about where this will take us...and if I am planning correctly, we will be spending less than HALF of what we were spending on eating out...that right there people...that's enough reason for me!!

a little sweetness...

Let's step away from my earlier rant to something a little sweeter...

Like Husby baking a cake for last weekends Murder Mystery Dessert Theater! :)

He made Carrot Cake...one of his favorites! He did an excellent job, baking all on his own while I was at work! He iced the cake, but waited for me to help with adding the special touch...the carrot on top!

All in all, he did a great job and I am sure it tasted delicious...I am not a big carrot cake fan myself; but he did a excellent job if you ask me!!

Secret Menus?

SECRET MENUS:

1. If you're at Starbucks and in need of just a little caffeine, don't worry -- there's a tiny option for you. It's the Short size, and they don't advertise it. It's like a little baby cup of coffee. It also comes in handy when you're scrounging for change and don't have enough for a tall (not that that has ever happened to me).

2. It's a good thing we don't have Jamba Juice here in Iowa, because I would be all over candy-based smoothies. Because it's considered a health-food chain, Jamba Juice doesn't officially list these on their in-store menus, but the Web site Mighty Foods assures us that the secret flavors exist.

The ones they confirmed with the company's headquarters include Strawberry Shortcake, White Gummy Bear, PB&J, Various flavors of Starbursts, Fruity Pebbles, Push-Up Pops, and Skittles. Other tantalizing flavors that are rumored to exist: Chocolate Gummi Bear, Apple Pie, Sourpatch Kid, Tootsie Roll, and Now and Later.

3. This one might be my favorite. At Fatburger, you can order a Hypocrite -- a veggie burger topped with crispy strips of bacon.

4. Chipotle has a whole secret menu that is limited only by your imagination -- they have a store policy that says that if they have the item available, they will make it for you. Things that have been tested include nachos, quesadillas, taco salads and single tacos. Some stores are testing out quesadillas as a regular menu item, however, so maybe someday soon you won't need a super-secret handshake to order one.

5. If you're at Wendy's and you're really hungry -- like, three-patties-just-won't-cut-it hungry -- go ahead and order the Grand Slam, which is four patties stacked on a bun. This option is only available at select Wendy's, and it's also known as the Meat Cube.

6. Several places, including McDonald's and In-N-Out, will serve you the Neapolitan milkshake. It's just what it sounds like -- chocolate, vanilla and strawberry shakes layered in a cup.

7. In-N-Out Burger's "secret menu" isn't so secret these days -- in fact, they've posted it on their Web site. But in case you're not in the habit of surfing fast food Web sites, here's the skinny on their rather un-skinny items: ordering something "Animal Style" at In-N-Out means you're going to get it with lettuce, tomato, a mustard-cooked beef patty, pickles, extra spread (it's sort of Thousand-Islandy) and grilled onions. You can even get your fries Animal Style.

"Protein Style" is a burger wrapped in a lettuce leaf instead of a bun. A Grilled Cheese is two slices of American cheese, lettuce, tomato and spread on a bun (grilled onions if you so choose).

And you can get just about any combo of meat and cheese that you want if you order it like you're ordering lumber: 3×3 gets you three beef patties and three slices of cheese, 4×4 gets you four of each, and so on. One item not listed on the Web site secret menu: the Flying Dutchman, which is two slices of cheese sandwiched between two patties, hold the bun.

8. Feeling a little health-conscious at Popeye's? If you are, you really should have gone somewhere else. But there's a little hope for you -- ordering "naked chicken" will get you breading-free poultry. The word is that this is on the menu at some Popeye's, but not all of them, although it is an option at all of them.

9. Like Chipotle, Taco Bell will make you just about anything within reason as long as they have the ingredients for it. Since most of the food at Taco Bell is made out of the same basic items, that means you can probably ask for most discontinued items and get them. One "secret," though, is that they have a not-advertised green chili sauce at most locations, and apparently it's excellent.

10. Some Subways will still make you the popular pizza sub from the 1990s. Once the chain decided to make their focus healthy eating, the pizza sub disappeared from the menu in most places (the word is that Canadian and Mexican Subways still offer them on a regular basis). But if you ask, lots of places will still make it for you. Be warned, though -- Jared would not approve of the nine slices of pepperoni and copious amounts of cheese slathered in marinara sauce.

Cheese Straws

I ran across a recipe yesterday that looked delish. So I decided to give it a try last night. Cheese Straws.

So first, I took my Extra Sharp Cabot Cheddar cheese and grated 2 cups worth. (a little more than the recipe called for...but I got carried away. I like da'cheese.


Then I dropped all my ingredients (minus the milk) into the mixer. Mixed it for a few beats then added in the milk. Then I mixed that all up till a crumbly dough ball formed. Then rolled it out on the counter-o-flour.


I then sliced the pieced (a bit too large actually...ooops) Then I layered them on my Pampered Chef cookie stone and baked them for 12-15 minutes (it actually ended up being closer to 18 minutes, but that's probably because I cut them too big.) And then I had my finished product.


They weren't bad. They just weren't great. I wanted them to be GREAT. Here are a few hiccups. They were too salty for my taste. I think when I make it again, I will only use a teaspoon of salt instead of a tablespoon, and I will use un-salted butter like the recipe calls for...both "oopsies" on my part. (duh...no wonder they were salty!) I will also cut them thinner, thus making them crispier. They were more bread like than crispy.

All in all, I think it's a decent recipe that does deserve another chance. What fun things have you made lately??
